The Indian version of a fritter
Ingredients
- pieces Potato, green pepper, squash, mushroom, spinach, onion, eggplant
- 2 cups buttermilk pancake mix
- 1 cup water , milk , or buttermilk
- 1 Tbs curry powder
- salt, to taste
- vegetable oil for deep frying
Method
Step 1
Make a thick batter using the pancake mix to which you have add the curry powder. Dip an onion ring or a piece of other vegetable into the batter, if the batter does not cling to the vegetable, then add vegetable oil a little at a time until the batter adheres. Dip each vegetable piece and deep fry in oil at 375F until golden.
Step 2
I have also added all vegetables into mixture and scooped them out by spoonfuls Serve hot
Step 3
While the true Indian recipe is complicated and time consuming this is a quick easy alternative method
