Orange-minted Peas and Pearl Onions

An updated version of a ordinary vegetable.  This recipe serves 4

Ingredients

  • 24 pearl onions Onions, pearl, raw
  • 2 cups fresh shelled peas Peas, green, frozen, unprepared
  • 1 tbsp butter Butter, without salt
  • 1 tsp grated orange rind Orange juice, raw
  • 2 tsp thinly sliced fresh minted leaves
  • mint leaves to garnish Peppermint, fresh

Method

Step 1

Cut small Xs in root end of unpeeled onions. boil in small saucepan of water for about 8 minutes or until just tender; drain and rinse under cold water. Peel onions ( skins should slip off) drain on paper towel. In large saucepan of boiling salted water, boil peas until just tender- crisp; drain well. In large skillet over medium-high heat, melt butter. Add onions and cook stirring, until golden brown. Stir in peas and orange rind; cook until peas are heated through. Stir in minted leaves. Serve garnished with mint sprigs.
