Ingredients
- 2 cups sifted flour Wheat flour, white, all-purpose, enriched, unbleached
- 1/2 cup butter Butter, without salt
- 1/4 cup shortening Shortening, household, lard and vegetable oil
- 3 large egg yolks Egg, yolk, raw, fresh
- 1/4 cup sugar Sugars, granulated
- 3/4 cup orange juice Orange juice, raw
- grated peel of 1 orange Orange juice, raw
- 1 1/2 tbsp orange liqueur Alcoholic beverage, liqueur, orange
- 1/2 tsp salt Salt, table
- FILLING Pie fillings, canned, cherry
- 2 1/2 lb ricotta cheese Cheese, ricotta, part skim milk
- 1 tbs flour Wheat flour, white, all-purpose, enriched, unbleached
- 1/2 tsp salt Salt, table
- 1 large orange, juice and grated rind
- 3 large egg yolks Egg, yolk, raw, fresh
- 1 large whole egg Egg, whole, raw, fresh
- 2 tbsp orange liqueur Alcoholic beverage, liqueur, orange
- TOPPING and GLAZE
- 6 oranges, peeled and sliced Oranges, raw, all commercial varieties
- juice of 1 orange Orange juice, raw
- 3 tbsp orange liqueur Alcoholic beverage, liqueur, orange
- 1/2 cup sugar Sugars, granulated
Method
Step 1
CRUST: Sift flour into a bowl. Cut butter and shortening into flour until evenly distributed. Mix together the remaining ingredients and add to the flour mixture. Stir until evenly moistened. Knead lightly, then cover with plastic wrap and chill for 1 hour. lightly butter a deep 10" springform pan. On a lightly floured board, roll the dough into a large circle. Press the pastry into the bottom and around the sides. Roughly level the top. FILLING: Press the ricotta cheese through a fine sieve into a large bowl. Add the remaining ingredients and beat with an electric mixer until smooth. Preheat oven to 350F. Pour filling into pastry -lined pan. Bake in the middle of the oven, with a pan underneath to catch the drips, for 1 - 1¼ hours. The filling should be firm in the centre. Cool cake completely before removing sides and bottom of springform pan. TOPPING and GLAZE: Make topping and glaze as close to serving time as possible. Arrange the orange slices in as attractive pattern on top of the cake. Combine orange juice, liqueur and sugar in a small pan. Bring to a boil and stir until the mixture forms a thick syrup. Brush syrup over the orange slices.
