Mexican Wedding Cookies

This was a special cookie in my home at Christmas. It came from a friend in the USA. This recipe serves
Ingredients
- 2 cups sifted flour Wheat flour, white, all-purpose, enriched, unbleached
- 3/4 cup icing sugar
- 1/2-1 cup butter only Butter, without salt
- 1 tbsp vanilla Vanilla extract
- 1 cup chopped pecans Nuts, pecans
Method
Step 1
Cream butter, work in vanilla. Sift flour and measure into a bowl. Sift icing sugar into flour in bowl. Work dry ingredients into butter mixture, adding nuts last. Knead to combine ingredients lightly until combined into a soft dough. Pat out on a lightly floured surface to a thickness of 1/4". Cut out into 1- 1 1/2'circles. Place on greased pan. Bake 10 mins at 300F then 10 mins at 325F. Remove and roll in icing sugar.
