Meg’s Marvelous Marinara

As simple yet delicious tomato based sauce that is perfect for any pasta. We prefer it over Capelli d’Angelo.
Recipe
Ingredients:
1 Tbsp olive oil
2 cloves garlic (minced)
1 medium onion (red , yellow, or white)
1 28oz can diced tomatoes
1 Tbsp crushed red pepper (less for the not so adventuresome)
1 Tbsp fresh basil and oregano (or 1 x tsp dried)
Salt and pepper to taste
Directions
Heat oil over medium -high heat in a medium high sided pan. When hot add onions and garlic and saute for 4 minutes. Add tomatoes with the juice and spices then reduce heat to low. Simmer for 20 minutes until sauce reduces or until desired consistency. Salt and pepper to taste. Serve over Capelli d’Angelo Pasta.
Variation. We have added chopped summer sausage or chorizo as a variation to this recipe. Add a cup of the sausage with the onions and garlic to saute and build your flavours. Chorizo is a very spicy italian sausage, so you may want to reduce the crushed red pepper flakes to 1 tsp

I skipped the meat option and added marinated artichoke hearts, very nice, and served over a bed of rigatoni, vice angel hair, as the sauce was a little chunkier. Delicious!
