Maui Onion Deep Dish


 This recipe serves 12


  • 1 cup, plus 2 Tbsp small grain rice Rice, white, long-grain, regular, cooked
  • 1/2 cup butter Butter, without salt
  • 3 1/3 lbs yellow onions, medium chopped Onions, yellow, sauteed
  • 1 cup, plus 2 Tbsp shredded Swiss cheese Cheese, swiss
  • 1 cup whipping cream Cream, fluid, heavy whipping
  • 2 Tbs minced parsley Parsley, raw
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
  • paprika Spices, paprika


Step 1

Generously grease a non aluminum pan 13x9". Rinse rice and cook 5 minutes in boiling salted water. Drain well. Melt butter in large frypan, brown onion until golden, about 30 minutes. Mix cheese and cream, then rice, parsley, salt and pepper. Turn into prepared dish and sprinkle with paprika. (Can be prepared a day ahead cover and refrigerate). Bring to room temperature before continuing. Bake at 325 F until golden brown about 1 hour.
