Marienbad Goulash Soup

This recipe serves 4
Ingredients
- 2 Tbs vegetable oil Vegetable oil, canola
- 3 medium onions, sliced thinly Onions, raw
- 1/2 tsp caraway seeds Spices, caraway seed
- 1 lb lean stewing beef, 3/4" thick cubes
- 1/3 cup tomato paste Tomato products, canned, paste, with salt added
- 1 Tbs paprika (sweet hungarian is preferred)
- 1/4 tsp cayenne Spices, pepper, red or cayenne
- 5 cups beef broth or stock, warmed
- 2 medium potatoes, peeled and diced Potatoes, raw, flesh and skin
- 3 Tbs flour for thickening
- salt and pepper to taste Peppers, sweet, red, cooked, boiled, drained, with salt
Method
Step 1
Heat oil in a large heavy bottomed pan. Saute onions and caraway seedsuntil a light golden colour.
Step 2
Add meat along with a pinch of salt. Brown meat over medium heat for 10-15 mins
Step 3
Add tomato paste, paprika, cayenneand 3 cups of boullion. Simmer until meat is tender, about 1 hour
Step 4
Add potatoes. Mix flour with remaining boullion making sure there are no lumps. Add and simmer for five to 10 mins until potatoes are cooked and mixture has thickened.
Step 5
Season to taste and serve with rye bread
