Lee"s Banana Muffins


A cottage favourite!  This recipe serves


  • ¾ cup butter--cold and cubed
  • 1¼ cups flour Wheat flour, white, all-purpose, enriched, unbleached
  • 1 cup sugar Sugars, granulated
  • 1 tsp baking soda Leavening agents, baking soda
  • 1 cup mashed bananas
  • 1 tsp vanilla Vanilla extract
  • 2 large eggs Egg, whole, raw, fresh


Step 1

Preheat oven to 350F. Grease pans with butter or a baking spray Mix the dry ingredients. With a pastry cutter cut in the cod butter until the texture of cornmeal . Beat eggs in a separate bowl and add bananas and vanilla, Combined well and add to dry mixture, combined until just moist. Pour into prepared pans. Bake 15-20 minutes for muffins or 1 hour for loaf. With a cake tester or toothpick. test to see if it comes out clean
