Lamb Medallions with Hollandaise Sauce


 This recipe serves


  • 1-4 lamb tenderloins---cut into medallions
  • ½ to 1 cup almonds or hazelnuts---- toasted and ground
  • 1-2 cup hollandaise sauce Sauce, hollandaise, with butter fat, dehydrated, dry
  • Butter for frying


Step 1

Prepare hollandaise sauce. Toast nuts to golden and grind them. Brown medallions in butter and keep warm. Serve medallions topped with hollandaise which has been infused with the ground nuts.
