La Tarte Feuilletee De Saumon Fume ( Smoked Salmon Tart)

I served this as a starter and revues were varied. It is good but is it great??? You try and decide.


  • 8 oz frozen puff pastry sheet, thawed
  • flour
  • 1/2 cup heavy cream, chilled
  • 1 Tbs prepared horseradish
  • juice 1 lime
  • 12 chives, finely chopped
  • freshly ground white pepper
  • salt
  • 8 oz smoked salmon, thinly sliced
  • 1/4 tsp pink peppercorns, crushed
  • 1 sprig dill


Step 1

Preheat oven to 425F. Line a baking sheet with parchment paper and set aside pastry out on lightly floured surface to a 10 " square. Using a sharp knife cut into 4-5" squares. place on prepared sheet and prick with tines of a fork. Bake until golden and crisp, 10-12 mins. Set aside to cool to room temperature.Whisk cream in a large chilled bowl until soft peaks form. Fold in horseradish, lime juice , 1/4 of the chives. salt and white pepper to taste. Spread one quarter of the horseradish cream onto each pastry square. Drape one quarter of the salmon slices over the horseradish cream, then sprinkle the tarts with the remaining chives and some of the pink peppercorns. Scatter dill over tarts to garnish.
