Kibbi Stuffing

This is the stuffing for the Kibbi but I have used it ti stuff wilted spinach leaves and stuff hollowed out zucchini
Ingredients
- 2 Tbs pine nuts (can use almonds if needed)
- 1 Tbs clarified butter
- 2 Tbs minced onions
- 1/4 lb ground lamb
- 1/4 tsp cinnamon
- 1/8 tsp ground allspice
- salt and pepper, to taste
Method
Step 1
In a skillet saute the pine nuts in clarified butter until they are golden. Remove with a slotted spoon and reserve them.
Step 2
In the pan saute the minced onions, adding more clarified butter if necessary, until they are soft, add the ground lamb and cook the mixture stirring , until the lamb is browned. Skim off the fat from the pan and stir in the reserved pine nuts, cinnamon, ground allspice and salt and pepper to taste
