Glazed Leg of Lamb with Honey-Soy

Tried this recipe years ago so its source is now unknown. I have modified it as noted  This recipe serves 8

Ingredients

  • 1 6-7lb` leg of lamb Lamb, Australian, imported, fresh, leg, sirloin chops, boneless, separable lean and fat, trimmed to 1/8" fat, raw
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
  • about a quart of water Water, municipal
  • 1/3 cup honey Honey, strained or extracted
  • 3 Tbs soy sauce Soy sauce made from soy and wheat (shoyu), low sodium
  • slivered garlic* Garlic, raw
  • 3 Tbs soy sauce Soy sauce made from soy and wheat (shoyu), low sodium
  • 2 Tbs lemon juice* or to taste Lemon juice, raw

Method

Step 1

Heat oven 450F. Trim fat. Place lamb on rack in a shallow roasting pan. Sprinkle and rub with salt and pepper then place garlic slivers into slits you make in the roast. With pastry brush, smear whole leg with honey. Add enough water to make 3/4"deep in pan. Put lamb in oven and roast 1/2 hour. Then reduce the heat to 350F and pour 3 tbsp soy sauce over lamb. Roast lamb 3-31/2hr longer. Basting every 1/2 hour. At the second basting pour 3 tsbp more soy sauce over lamb. When done remove and pour juices into a bowl. Let stand and remove fat. Pour over sliced meat or thick with cornstarch if desired.
