Gin And Tonic Sorbet2015-02-10

- 2 limes Limes, raw
- 1/2 cup sugar Sugars, granulated
- 1/3 cup Gin
- 3 bottles tonic water
Place one lime into boiling water to remove wax. Pat dry and with a vegetable peeler remove the zest scraping off any pith. Mince zest making about 2 teaspoons. Squeeze lime to make 1 tablespoon of juice. Reserve.
Place zest and sugar in bowl and with a wooden spoon, crush to mix about 3 mins. Set aside for 30 mins. Stir in gin and reserved juice. Pour in tonic water and stir to dissolve the sugar. Refrigerate, covered until chilled, about 30 minutes. Strain if desired. Pour mixture into bowl and freeze, stirring occasionally until set.
To serve, scoop out and garnish with spare lime.
