Deviled Chicken Wings

Different and tasty version
Ingredients
- 1/4 cup mayonnaise
- 1/4 cup Dijon mustard
- 1 tsp dry mustard
- cayenne, to taste
- 1/2 cup fine fresh bread crumbs
- 3 Tbs minced fresh parsley leaves
- 2 lbs chicken wings with tips cut off and reserved for stock
Method
Step 1
In a small bowl, whisk together the mayonnaise, mustards, and the cayenne. In another bowl combine well the bread crumbs and parsley.
Step 2
Arrange wings skin side down on a foil-lined rack of a broiler pan and season them with salt and pepper. Brush the wings liberally with some of the mustard mixture and broil them under a preheated broiler 4 to 5 inches from heat for 10-12 minutes, or until they are browned. Turn the wings, brush them with more of the mustard mixture, and broil them for 6 minutes more, or until they are tender. Brush the wings with the remaining mixture, top them with the crumb mixture, patting it on, and broil them for 2-4 minutes or until the topping is golden brown.
