Creamy Parmesan Spinach

This a very nice way to get none spinach lovers to try it.  This recipe serves 4

Ingredients

  • 1/2 cup whole wheat bread crumbs
  • 1 tsp butter Butter, without salt
  • 1 Tbs chopped parsley, chopped Parsley, raw
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
  • 1 tsp olive oil Oil, olive, salad or cooking
  • 1 tsp minced garlic Garlic, raw
  • pinch red pepper flakes
  • 1/2 cup half and half cream Cream, fluid, heavy whipping
  • minced zest of 1 lemon Lemon peel, raw
  • salt to taste Salt, table
  • 1/2 cup Parmesan cheese, grated Cheese, parmesan, grated
  • 2 Tbs water Water, municipal
  • 2 bags (6oz ea.) baby spinach ( about 12 cups)

Method

Step 1

Saute garlic and red pepper in olive oil for 30 seconds; add the cream lemon zest as salt to taste. Stir in parmesan cheese; reduce heat and keep warm. Saute spinach in the water until wilted. Drain well; add to sauce and simmer for 2-3 mins. stirring constantly.
