Creamy Broccoli Soup


 This recipe serves 8


  • 2 Tbs onion, minced Onions, raw
  • 3 Tbs flour Wheat flour, white, all-purpose, enriched, unbleached
  • 1 1/2 tsp salt Salt, table
  • 3 cups milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
  • 3 cups chicken broth Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 1 10 oz package broccoli, frozen,chopped & semi thawed
  • 2 cups carrots, thinly sliced Carrots, raw
  • pepper Spices, pepper, black


Step 1

Saute onions in butter til tender.

Step 2

Add seasoning and flour. Make a roux then grabut dually add milk stirring constantly to blen. Bring to boil and add broth, broccoli and carrots .Lower heat.

Step 3

Cook over low heat stirring constantly,. Do Not Boil, for about 25 mins or until carrots are tender
