Corned Beef Florentine

Ingredients

  • 2 Tbs margarine
  • 3 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 lb Edam cheese, grated
  • 2 12oz packages frozen spinach, thawed and drained
  • 2 cans corned beef flakes, drained and flaked with a fork

Method

Step 1

Melt margarine in 9X13 pan. Beat eggs and milk together. Combine flour, salt, and baking powder. Stir into egg mixture.

Step 2

Add cheese, spinach, corned beef. Blend well.

Step 3

Spread over melted margarine in pan.

Step 4

Bake in 350F oven for 35 minutes or until knife comes out clean.

Step 5

Cut into squares and serve warm or cold.
