Ingredients

  • 1 medium avocado, Chilled Avocados, raw, California
  • 1 1/4 cups chicken broth, chilled Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 1/4 cup plain lowfat yogurt Yogurt, plain, low fat, 12 grams protein per 8 ounce
  • 2 tsp lemon juice Lemon juice, raw
  • 1/4 tsp salt Salt, table

Method

Step 1

Peel and seed avocado; cut into cubes. process avocado and next 3 ingredients in a blender until smooth, stopping to scrape down sides. Stir in salt.

Step 2

Serve soup immediately
