Cocktail Asparagus Rolls2013-06-20

- 1 14oz can asparagus spear, canned
- 18 slices white or brown bread
- 4 oz package blue cheese, at room temperature
Drain asparagus carefully and spread the spears on kitchen paper to soak up excess moisture. Trim crusts from bread slices then flatten each very firmly with arolling pin until thoroughly squashed.
Spread each slice with softened blue cheese. Take one asparagus spear and place near the edge of the bread slice then roll up tightly. Cut each roll in half to make two pieces and secure each with a toothpick. Continue with remaining slices.
Cover with plastic wrap until required.
Shortly before serving, place in a pre heated oven at 350F for about 10-12 minutes until crisp and lightly browned.Serve warm
