Chilled Grilled Black Figs with Virginia Country Ham and Lime Cream

Ingredients
- 12 black Figs, sliced in ½ length wise
- 2 tbsp olive oil
- 1 tsp cinnamon
- 1 tbsp sugar
- ½ cup heavy cream
- ¼ cup lime juice
- pinch nutmeg
- 2 limes
- 6 oz thinly sliced Virginia country ham
- 4 tsp snipped chives and flowers
Method
Step 1
Brush figs with oil. Combine sugar and cinnamon and sprinkle over figs. Broil or grill 2-3 mins until soft but still hold shape. Mix cream til soft peaks. Slowly add lime juice and nutmeg to form a thick sauce. Serve: Cut limes in half and level on the bottom. Place on plate and surround with fig halves, drapes with ham and pipe with lime cream in a lacy pattern. Sprinkle with chives. Do ahead: Can do ahead except lime cream, Refrigerate. Could use lime coulis as a base.
