Chili Con Queso

Ingredients
- 1 medium onion, finely chopped
- 3 Tbs butter
- 3 Tbs flour
- 1 tsp salt
- 1 cup heavy cream
- 1 pound can whole tomatoes, drained and chopped
- 1 4 oz can green chilies, seeded and chopped
- 1 8 oz package Monterey jack cheese, cubed
Method
Step 1
Saute onions in butter in a medium saucepan until tender. Stir in flour and salt; cook stirring constantly just until bubbly. Remove from heat. Stir in heavy cream slowly. Return to heat and continue cooking and stirring until sauce thickens and begins to bubble, about 3 minutes.
Step 2
Stir in tomatoes and chilies; cook 1 minute. Add cheese stirring constantly, until melted. Serve warm with Cumin chips
