Chicken Pomodoro


A gorgeous presentation and a delightful fresh flavour  This recipe serves 2


  • 4 chicken cutlets, about 1/4" thick Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 2 Tbs vegetable oil Vegetable oil, canola
  • 1/4 cup vodka
  • 1/2 cup low sodium chicken broth Soup, chicken broth, low sodium, canned
  • 2 Tbs fresh lemon juice Lemon juice, raw
  • 1/2 cup fresh tomatoes, chopped Tomatoes, red, ripe, raw, year round average
  • 2 Tbs heavy cream Cream, fluid, heavy whipping
  • 1/3 cup green onions, minced Onions, green, spring or scallions (includes tops and bulb), raw


Step 1

Season cutlets with salt and pepper then dust with flour Saute cutlets in oil. Transfer to a platter; pour off fat from pan. Deglaze pan with vodka (AWAY FROM THE HEAT) and cook until vodka is nearly gone. Add broth and lemon juice. Return cutlets to pan and cook on each side for 1min. Transfer cutlets to a warm plate. Finish the sauce with tomatoes and cream. Heat through, then pour over cutlets. Garnish with scallions
