Cheesy Beef and Angel Hair Lasagne

Ingredients
- 500 g angel hair pasta Pasta, angel hair
- 2 cups ricotta cheese Cheese, ricotta, part skim milk
- 1/2 cup parmesan cheese, grated Cheese, parmesan, grated
- 2 egg, lightly beaten Egg, whole, raw, fresh
- 1/4 cup fresh parsley, chopped Parsley, raw
- 1/2 cup grated cheddar cheese Cheese, cheddar
- 2 Tbs olive oil Oil, olive, salad or cooking
- 2 medium onions, chopped Onions, raw
- 2 cloves garlic, crushed Garlic, raw
- 1 1/2 kg ground beef Beef, ground, lean, (approximately 21% fat), raw
- 1/2 cup tomato paste Tomato products, canned, paste, with salt added
- 425 g canned tomatoes Tomatoes, red, ripe, canned, whole, regular pack
- 1 1/2 cups beef stock Soup, beef broth or bouillon canned, ready-to-serve
- 1/2 cup dry red wine Alcoholic beverage, wine, table, red
- 2 Tbs fresh oregano, chopped Spices, oregano, ground
- 40 g butter Butter, without salt
- 1/4 cup flour Wheat flour, white, all-purpose, enriched, unbleached
- 2 cups milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
- 1 tsp dijon mustard Mustard, Dijon
- 1/4 tsp nutmeg, ground Spices, nutmeg, ground

Step 1
Meat sauce: ingredients 8 to 16 --Heat oil in pan, add onions, garlic and ground meat; cook , stirring until mince is browned. Stir in paste, undrained crushed tomatoes,stock.wine and oregano; simmer, uncovered about 45 mins. til sauce thickens.White Sauce: Ingredients19-22 -- Melt butter in pan , stir in flour, stir over heat until bubbling. Remove from heat; gradually stir in milk,add mustard and nutmeg, stir over heat until sauce boils and thickens.Add pasta to large pan of boiling water, boil, uncovered, about 3 mins. or until pasta is just tender; drain. Combine ricotta,parmesan, eggs and parsley in medium bowl. Spread a third of the meat sauce over base of 16 cup shallow ovenproof dish. Top with a third of pasta and a third of the ricotta mixture. Repeat layering, finishing with pasta; pour white sauce over pasta, sprinkle with cheddar cheese. Bake uncovered in moderateoven about 1 hour or until cheddar is melted and top browned.
