Basic Lemon Marinade

Spring is here and another season of grilling on the barbecue. Cooking kebabs is one of our favorite things to do on the grill. The meat cooks quickly with a crisp sear on the outside and moist, juicy meat inside. This is our basic lemon marinade that we use for chicken. We cut boneless chicken in to 1 inch cubes and then marinate for 2-4 hours. It can also be used for fish or shrimp. When cooking with seafood you should but the marinate time to 30 minutes or it may start to cook the meat.
Recipe
4 medium cloves garlic, crushed
1 tablespoon dried thyme (substitute 2X fresh tablespoons fresh, chopped)
1 1/2 tablespoon honey
1 1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
5 medium lemons, for freshly squeezed juice
1/2 cup extra-virgin olive oil
Using a 2 cup measuring cup, whisk together the first five ingredients until blended. Slowly add the juice from the lemons whisking the mixture together again. Add the olive oil, whisking the mixture until well blended.
Cover mixture and refrigerate until ready to use. Whisk the emulsion before using.
