Apple, Dried Cherry and Walnut/Pecan Salad with Maple Dressing

Ingredients

  • MAPLE DRESSING
  • 1/4 cup mayonnaise Salad dressing, mayonnaise type, regular, with salt
  • 1/4 cup pure maple syrup
  • 3 Tbs Champagne wine vinegar or white wine vinegar
  • 2 tsp sugar Sugars, granulated
  • 1/2 cup vegetable oil Vegetable oil, canola
  • SALAD Oil, olive, salad or cooking
  • 1 5 0Z BAG mixed baby greens ( 10 cups lightly packed)
  • 2 Granny Smith apples, peeled cored and cut into matchstick size strips
  • 1/2 cup dried tart cherries or cranberries
  • 1/2 cup nuts, chopped and toasted Nuts, walnuts, english

Method

Step 1

Dressing: Whisk mayonnaise, maple syrup, vinegar,and sugar in medium bowl to blend. Gradually whisk in oil until it thickens slightly

Step 2

Season to taste with salt and pepper. (Dressing can be done 3 days ahead, covered and refrigerated. Rewhisk before using)

Step 3

Salad: Toss greens, apples, cherries and 1/4 cup nuts in large bowl to combine. Toss with enoughdressing to coat. Divide salad equally among plates.

Step 4

Sprinkle with remaining 1/4 cup nuts and serve
