Summary: The food and drink at this restaurant provides local Spring Hill residents a gourmet opportunity from the many chain restaurants in this part of Florida. The food and service were very good with prices that are reflective of the quality delivered. The menu is more extensive than we expected with a good variety of daily specials. Meats and vegetables were prepared perfectly with their signature lamb being superb. We had some hits and misses with the appetizers. The soup of the day was a disappointment and the included salad needs improvement. The wine and beer selections were excellent. Overall we would provide them 4 out of 5 stars. One final word, if you do not know or have never heard the word gastronomy then you probably would not be a good fit for their expectation of a customer. Dinner is expected to be a 1.5-3 hour food experience.

Our review of any restaurant includes their bread and desserts. Not that we need to have these extra calories, but they give you your first and last impressions of the establishment. Nouvelle’s bread was good but not great for a gourmet restaurant. We tried their ginger cake dessert that had all the makings for being a great and unique dessert. The amount of ginger spice was perfect and the other ingredients were wonderfully complimentary; the fail came with the cake being dry.

Our first service was the salad that comes with every entrée. Some might find this irregular to come before the appetizers but this gets you something while they are preparing the appetizers. High marks for getting food to us quickly but the salad was lacking in flavors, quality and presentation. An area worthy of some improvement. For our appetizers we ordered a chicken crepe, soup of the day and a shrimp special. The shrimp special had great flavors, was cooked to perfection and of high quality. The crepe can be filled with a chicken or seafood ‘a la king’ filling. Our chicken crepe arrived at an appropriate temperature and the filling was good but could have been enhanced with some herbs. Unfortunately the crepe, which may have been perfect when made, had dried out and was overcooked in the oven with an almost burnt end to it. The vegetable soup of the day, an unappealing grey mush that lacked any unique flavors.
We struggled to decide on our entrees from the many choices and daily specials. Everyone should be able to find an entrée to his or her satisfaction. After some debate we chose the signature lamb and the Chateau Briand for two. These dishes were excellently prepared to our desired temperatures. The dishes came with snap peas, carrots and dauphinois potatoes. The vegetables were full of flavor and good texture. The carrots were not just boiled but prepared with bay leaves, and spices that were a wonderful surprise. The potatoes were of classic French cuisine although slightly heavier on the garlic than usual. Everyone had them so there were no garlic offenses to be made at the table or later in the evening.

Service overall was appropriately attentive with an air of being in Paris or Belgium. The Belgian immigrant owners have brought some of the homeland to this restaurant with their food, service and beverage selections. Would we return to Nouvelle Cuisine again? Our party comprised of one local resident and two visitors so the vote is really from one of us. Yes, we would return when looking for some quality gourmet food that one would not expect next to a tattoo shop or in Spring Hill for that matter. As noted, there are some things that could be improved but overall it can be a great experience of flavors not found locally.
